  • 1 kg baby new potatoes halved
  • 1/4 cup gherkins finely chopped
  • 1/4 cup dill chopped
  • 1/4 cup parsley chopped
  • 3 spring onion finely chopped
Dressing
  • 1 clove garlic crushed
  • 1 gherkin finely chopped
  • 1 tsp sugar
  • 2 tsp grainy Dijon mustard
  • 1 tbsp white wine vinegar
  • 1/3 cup olive oil
  • salt flakes and freshly ground black pepper
Method
This French style potato salad is made with a simple herb vinaigrette, the perfect partner to accompany rich Christmas meats and a guaranteed crowd please for summer barbecues. Estimated cost per serve: $1.90*
  1. For the dressing, combine garlic, gherkin, sugar and salt together in a pestle and mortar, ponding to a smooth paste. Place in a screw top jar with remaining ingredients and shake until well combined. Set aside for later.
  2. Place potatoes in a large saucepan covered in cold water over a medium heat. Bring to boil and cook for 10 minutes or until tender. Drain. Return potatoes to pan and pour half the dressing over the hot potatoes, tossing gently to combine. Allow potatoes to cool completely.
  3. To serve, place potatoes in a large bowl and pour over remaining dressing, tossing until well coated. Add gherkins, dill, parsley and spring onion, tossing to combine.
