Lettuce Wedge Salad with Crispy Capers and Green Goddess Dressing

  • 1 large iceberg lettuce
  • 1 tbsp olive oil
  • 2 tbsp baby capers drained
  • lemon zest
  • 1 tbsp chives chopped
  • chive flowers to garnish (Optional)
Green goddess dressing
  • 1/2 avocado, skin removed
  • 2 tbsp lemon juice
  • 2 tbsp baby capers drained
  • 1/2 clove garlic crushed
  • 2 tbsp coriander leaves roughly chopped
  • salt flakes and freshly ground black pepper
Method
Serving the humble iceberg lettuce as a wedge salad is a great way to maintain crunch, texture and freshness. The dressing elevates this salad to an entertaining worthy dish, that won’t cost a fortune and is super simple to prepare. Estimated cost per serve: $1.40*
  1. Cut lettuce into 8 equal sized wedges and place on a serving platter.
  2. Heat half the olive in a small non-stick frying pan over a medium heat. Add garlic and fry until lightly golden.
  3. Remove from pan and set aside for later. Add remaining oil and capers to the pan and fry until crispy. Set aside with the garlic.
  4. For the dressing, combine all the ingredients together in a food processor, pulsing until finely chopped.
  5. To serve, drizzle dressing over lettuce wedges and top with fried capers and chives.
