Serving the humble iceberg lettuce as a wedge salad is a great way to maintain crunch, texture and freshness. The dressing elevates this salad to an entertaining worthy dish, that won’t cost a fortune and is super simple to prepare.

  1. Cut lettuce into 8 equal sized wedges and place on a serving platter.
  2. Heat half the olive in a small non-stick frying pan over a medium heat. Add garlic and fry until lightly golden.
  3. Remove from pan and set aside for later. Add remaining oil and capers to the pan and fry until crispy. Set aside with the garlic.
  4. For the dressing, combine all the ingredients together in a food processor, pulsing until finely chopped.
  5. To serve, drizzle dressing over lettuce wedges and top with fried capers and chives.
