Asian Style Nashi Pear and Peanut Slaw

Ingredients
  • 1 nashi pear
  • 1 tbsp lemon juice
  • 1/4 red cabbage shredded
  • 1/4 Chinese cabbage shredded
  • 1 cup snow pea shoots
  • 1 large large carrot, peeled and spiralised
  • 3 spring onions halved and julienned
  • 1/2 cup coriander leaves
  • 1/3 cup unsalted roasted peanuts
  • 2 teaspoons white sesame seeds toasted
  • 2 teaspoons black sesame seeds toasted
  • 1/4 cup fried shallots, to serve
Chili and Lime Dressing
  • 1 clove garlic crushed
  • 2 teaspoons coriander root, rinsed and finely chopped
  • 2 teaspoons long red chilli, finely chopped
  • 2 teaspoons brown sugar
  • 1/4 cup lime juice
Method
  1. To make dressing, place all the ingredients together in a screw top jar and shake until well combined. Set aside until required.
  2. Place Nashi pear slices in a small bowl and pour over lemon juice, tossing until well coated.
  3. To assemble the salad, place the shredded cabbages, snow pea shoots, spiralised carrot, spring onions, coriander, 1/2 of the roasted peanut, sliced Nashi pear and 1/2 of dressing, tossing together until well combined.
  4. Place salad onto a large serving platter, sprinkle over the sesame seeds, fried shallots and remaining peanuts. Serve with remaining dressing.
