  1. To make dressing, place all the ingredients together in a screw top jar and shake until well combined. Set aside until required.
  2. Place Nashi pear slices in a small bowl and pour over lemon juice, tossing until well coated.
  3. To assemble the salad, place the shredded cabbages, snow pea shoots, spiralised carrot, spring onions, coriander, 1/2 of the roasted peanut, sliced Nashi pear and 1/2 of dressing, tossing together until well combined.
  4. Place salad onto a large serving platter, sprinkle over the sesame seeds, fried shallots and remaining peanuts. Serve with remaining dressing.
