Salmon & Noodle Stir-fry by Mandy Hall

Ingredients
  • 4 skinless salmon pieces (approx 800g) (make sure salmon has been pin boned)
  • 2 TB grated ginger
  • 1 clove garlic minced
  • 1.5 TB sesame oil
  • 80 ml Tamari
  • 1 TB honey
  • 2 tsp salt
  • 3 TB peanut oil
  • 5 Spring onions sliced diagonally
  • 1 cup cup of snow peas, sliced diagonally
  • 80 ml Chinese Rice Wine
  • 2 bunches broccolini
  • 50 ml water
  • 250 g soba noodles
  • 1 TB black sesame seeds
Method
  1. Make marinade - combine ginger, garlic, sesame oil, tamari, honey and salt into a large bowl. Add salmon and mix well to coat, set aside.
  2. Heat 1/3 of the oil in frypan or wok over a medium to high heat (remember, we want this to be hot but not smoking!). Have a clean plate or bowl to the side ready to place the cooked salmon, Half at a time, add the salmon and marinade to the wok and cook for approx. 3 minutes (e want this to be just cooked). Remove salmon from wok and onto plate. Add another 1/3 of the oil and repeat process with the remaining salmon.
  3. Add remaining oil to the wok and cook the spring onion and snow peas for 1-2 minutes, add the rice wine and broccolini and cook for a few minutes, add the salmon, cooked noodles and all juices back into the wok and toss to warm through, serve sprinkled with black sesame and sliced green onion tips.
