Baked Brie with Cherry Compote

Ingredients
- 1 wheel brie cheese
- 1 cup fresh SA cherries, pitted
- 1 tbsp sugar
- squeeze lemon juice
- Crackers or crusty baguette for serving
Method
- Preheat Oven: Preheat the oven to 180°C
- Prepare Brie: Place the Brie wheel on a baking sheet lined with crumpled parchment paper - or ideally, if you have a ceramic cheese baking dish lurking in the back of your cupboard - now is the time to use it.
- Cherry Compote: In a small saucepan, combine cherries, 1 tablespoon of sugar and a squeeze of lemon juice. Cook on low to medium heat, stirring occasionally until cherries gently collapse and a ruby-red syrup develops in the bottom of the pan. Set aside.
- Bake Brie: Place the Brie in the preheated oven and bake until it becomes gooey and slightly melted, usually around 15-20 minutes.
- Serve: Once the Brie is ready, carefully transfer it to a serving plate or board (this is where the crumpled parchment paper makes it easy) Spoon the cherry compote over the melted Brie, and serve with crackers or crusty baguette. Dig in while it’s still oozy and warm.
