Enrico will explore the foundations of great pizza, from flour selection and fermentation to dough preparation, stretching and baking. He will share professional knowledge, practical techniques and useful tips that guests can also apply when making pizza at home.
Throughout the session, Enrico will bake a selection of pizzas for guests to taste, celebrating Italian tradition, modern technique and quality South Australian produce, including from Marino Fine Foods and Lucia’s Fine Foods.
Enrico Sgarbossa is an award-winning Italian pizzaiolo with over 17 years of experience in the industry. In 2014, he was crowned Best Pizza in Europe and later became a technical specialist for Molino Dalla Giovanna, working alongside some of Italy’s most respected bakers and pastry chefs. In 2016, Enrico opened Al Taglio: The Art of Pizza — Australia’s first gourmet pizzeria of its kind — earning the prestigious “3 Slices” award from Gambero Rosso for four consecutive years. Today, Enrico is recognised internationally for his expertise in pizza, dough innovation, education, and artisan baking.
