Sumac and Lime Beef Skewers

Ingredients
- 600 g beef rump steak cubed before skewering
- 1 tbsp sumac
- 1 tsp salt
- 2 garlic cloves crushed
- Juice of 1 lime plus extra lime wedges to serve
- 1 red onion cut into chunks
- in Bamboo skewers soaked in water for 20 minutes
Method
- Toss beef with sumac, salt, garlic, and the juice of one lime.
- If you are marinating this the night before - don’t add the lime until just before you’re ready to cook.
- Thread beef on to the bamboo skewers, alternating beef cubes and red onion onto the skewers.
- Cook the Skewers Grill or pan-fry skewers for 6–8 minutes, turning occasionally, until desired doneness.
- Serve skewers on hommus with a simple salad, some thick Greek yoghurt seasoned with garlic and lime juice and some fresh lime wedges.
- Thinly slice some red onion, mix with a teaspoon of sumac and a squeeze of fresh lemon or lime juice and set aside to serve with the beef.
