Sumac and Lime Beef Skewers
Sumac is a tangy, fruity and slightly smoky spice which is a staple in Middle Eastern cuisine. It pairs so beautifully with lime and beef – you won’t be able to get enough of these! Serve with some Greek yoghurt mixed with garlic and lime juice, and a simple Middle Eastern Fattoush salad.

  1. Toss beef with sumac, salt, garlic, and the juice of one lime.
  2. If you are marinating this the night before – don’t add the lime until just before you’re ready to cook.
  3. Thread beef on to the bamboo skewers, alternating beef cubes and red onion onto the skewers.
  4. Cook the Skewers Grill or pan-fry skewers for 6–8 minutes, turning occasionally, until desired doneness.
  5. Serve skewers on hommus with a simple salad, some thick Greek yoghurt seasoned with garlic and lime juice and some fresh lime wedges.

Optional

  • Thinly slice some red onion, mix with a teaspoon of sumac and a squeeze of fresh lemon or lime juice and set aside to serve with the beef.
